    We were at Trader Joe’s over the weekend, and since we love their guac so much, I insisted we buy some. I think I said something like, oh we’ll make tacos this week. Later I realized how crazy this week was going to be — the only night J and I were both home for dinner was yesterday (hello, House finale!). So, yesterday we enjoyed fish tacos: grilled tilapia, shredded cabbaged, toasted corn (frozen corn was another TJ purchase), shredded cheddar cheese flavored with caramelized onion (weird, but good!), salsa and the aforementioned guac on flour tortillas. I think we were missing a little heat in our tacos, but otherwise they were very good. Of course, I managed to over-stuff my tortillas and only managed to eat two.
