I own three cookbooks by Ina Garten, but her original volume The Barefoot Contessa Cookbook is — by far — my favorite. In it are some fantastic recipes that have never steered me wrong. That includes this fresh corn salad, which is a perfect summer side dish.
What I love about this recipe are the balance of flavors and the vibrant colors. The bright yellow corn, red onion and green basil are a gorgeous combination. Apple cider vinegar compliments the sweet corn and basil nicely, while taking the bite out of the onion.
Note for the non-summer months, you can use canned or frozen corn. In fact, the corn pictured above was frozen. No matter what corn you use, this salad is a real crowd-pleaser, even if the crowd is just J and myself.
